Every 3rd Wednesday of each month, our chefs at Forest Mere, Henlow, Springs and Tring will be hosting a Chef's Table event, where you will get to try new dishes and learn more about the story behind each one.
MARCH CHEF'S TABLE
The menu, carefully crafted, mirrors this philosophy, guiding each guest on a journey of nourishment and balance.
The experience begins lightly with Cured Cod, its clean, delicate flavour harmonized with pickled fennel and radish salad, brightened by a grapefruit dressing invigorating the senses and supporting digestive wellness. For a plant-forward alternative, the Artichoke & Ricotta Stack layers creamy ricotta with tender artichoke and a crisp parmesan accent, offering a mindful balance of protein and fresh vegetables.
For the main course, guests are invited to Savor mindful indulgence: Roasted Venison Loin paired with green asparagus, wild garlic silk, and truffle dauphinoise potato delivers lean protein and earthy Flavors, grounding the body and spirit. The Grilled Cauliflower with Asparagus and Wild Garlic Risotto offers a lighter, plant-based option, rich in antioxidants and vibrant spring greens – perfect for recharging energy gently and naturally.
The meal concludes with Rhubarb–Vanilla Cheesecake, topped with a ginger and cardamom honey drizzle – a dessert designed not to overwhelm but to delight, promoting a sense of well-being with every subtly spiced, seasonal bite.
Each course at Champneys is more than nourishment; it is a mindful pause – a celebration of seasonal freshness, a gentle restoration for body and mind, and a reminder that wellness can be delicious.
